Amaranth
Grown for grains and leaves.
I mainly use them for the leaves (nutrition facts), as the grain is so small, it's hard to harvest and hull.
(birds love the grains too)
While many varieties are available, I mainly grow the red ones. That way I can spot them versus any wild varieties that may pop up. Mine are all small right now. Here's what most of them look like as they grow and flower:
