Sunchoke

Also known as a Jerusalem Artichoke, they are not related to artichokes, nor are from Jerusalem (from the Americas). No one is sure why part of their name is Jerusalem, but one theory is that one Native American name (out of many languages) for them sounded similar "Jeri-salum", which early settlers mistook for Jerusalem. Related to sunflowers, they resemble tall sunflowers with small flower-heads when growing. These veggies are actually grown for their tubers. With inulin, they are a good veggie for diabetics. I personally have not figured out how to cook them properly to make them taste like potatoes (which supposedly they can be used as a substitute). Instead, I eat them raw (which taste like a carrot).
